Baggeweizen - Hefeweizen (ish) brewed for Baggebaren, Double Wars XXXV
Posted on 2024-04-23
This is kind of a take on a hefeweizen, which is a wheat beer style from southern Germany. I say “kind of a take on” because the recipe is very much improvised. I needed material to make another 20L of beer for Baggeholm in preparation of Double Wars XXXV and I didn’t have time to order ingredients online due to poor planning. Basically, I put this “recipe” together in the only store nearby that sells any kind of brewing equipment, and their malt supply is… Well, it’s almost generous to call it “lacking”.
Anyway, enough jibber-jabber, here’s the recipe:

Water
- Mash according to the mashing schedule using (grist weight)*3L water, i.e. (4.5+0.2+0.2+0.1)*3=15L.
- Goal volume is about 20L, and with a water retention rate of 0.5-0.6L water/500g grains, roughly 5L will be retained. As such, I will sparge with 20+5-15=10L of water.
- My pot has a boil-off rate of about 3L/h, so another 3L of water will be added to compensate.
- No water chemistry stuff is being done
